What is some healthy food that doesn't suck?

Try combining all those ingredients in various ways. A simple stir fry with an ortment of your listed items with some taryaki sauce, a pinch of sugar on a bed of rice is great. When you do combine your items, make plenty because a lot of leftovers still hold great nutritional vitamins. Any sort of pasta mix is another idea, and lefts overs are great cold or reheated. The stir fry as I mentioned is great cold second day, or reheated. Different salads are fun to make. Combining those foods together in different ways change things up. You have listed some good healthy foods but you are missing a lot of other fruits and veggies that will do wonders for your health.
